I’m sitting here in my messy apartment just outside Atlanta—well, technically the burbs—January 2026, it’s like 45 degrees and raining, there’s an empty Diet Coke can sweating on my desk, and I’m staring at the fridge wondering why adulting has to involve food decisions every single day. Seriously.

I started messing around with low carb meal ideas back in like mid-2024 because my bloodwork came back looking like a crime scene and my jeans were staging a full-on protest. I’m not gonna pretend I’m some fitness guru now—I still sneak French fries when nobody’s looking—but these easy low carb meals have legit kept me from gaining back the 45 pounds I lost. (Yeah I said 45 not 160 earlier, math is hard when you’re hungry.)

  3. Buffalo chicken lettuce wraps — Shredded chicken + Frank’s RedHot + butter, wrapped in romaine. Tastes like bar food but without the regret. I add blue cheese dressing and then hate myself a little but it’s worth it.

  • Pork rinds (I know, they sound gross, but they’re life).
  • Cheese sticks but the good kind, not the plastic-wrapped sadness.
  • Olives straight from the jar while standing in front of the fridge at 11 p.m.
  • Celery with almond butter if I’m feeling virtuous (rare).
