Maple Sap Runs In A Narrow Window
Sugaring depends on nights below freezing and days above it, a pressure cycle inside the tree that lasts only a few weeks each late winter.

Maple syrup is one of the few foods whose production season is set by a daily temperature swing rather than by a growing season. The window is short and cannot be moved.
The tree pumps sap by freezing and thawing
When temperatures drop below freezing at night, pressure inside the wood falls and water is drawn upward. When they rise above freezing in daylight, pressure builds and sap flows out of any opening.
A tapped hole is such an opening. The tree is not bleeding in any damaging sense; it is releasing pressure that the cycle created.
Without both halves of the cycle nothing happens. A run of warm nights ends the flow as surely as a hard freeze that never breaks.
Late winter is the only time both conditions hold
The alternation of freezing nights and thawing days occurs reliably for a few weeks between deep winter and the start of leaf-out, and its timing shifts with latitude and elevation.
Once buds break, the chemistry of the sap changes and the resulting syrup develops flavors most producers consider off. The season ends at that point regardless of weather.
That gives sugarmakers a compressed period in which the year's entire production must be collected and boiled, often while snow is still on the ground.
Most of the work is evaporation
Sap emerges as mostly water with a small proportion of sugar, and syrup is defined by a much higher concentration. The gap between the two is closed by removing water.
That takes a great deal of fuel and time, which is why sugarhouses are built around a long, shallow evaporator designed for maximum surface area rather than a deep pot.
Modern operations reduce the load by pushing sap through membranes first, but the finishing still happens over heat, and judgment about when to stop is still made by the operator.
The practice was learned, not invented by settlers
Indigenous nations across the northeastern woodlands were processing maple sap long before European arrival, using heated stones and freezing to concentrate it.
Colonial and later commercial sugaring adopted the underlying knowledge of when and how to tap, adding metal pans, tubing and eventually vacuum systems.
The season, the species and the temperature cycle are unchanged. What has changed is only the efficiency of moving and boiling the sap.
A sugarbush is a long-term commitment
A maple takes decades to reach tappable size, so a working sugarbush represents a landowner's decision made generations earlier and maintained since.
Thinning, road access and protection from grazing all matter, and a stand that is neglected for years does not become productive again quickly.
That timescale is why sugaring stays concentrated in families and communities with continuous tenure on the same wooded ground.
